This 3-night pasta and Italian cooking holiday was developed by those with a real passion for teaching people what makes Italian cuisine so special. And it’s a holiday for those who want to know everything about what makes artisan pasta amazing, and understand the traditional, regional sauces that bring it to life.

This is not your typical cookery course. During this break, you will go from farm to table, discovering what goes on behind the scenes of Italian pasta making. Against a stunning Tuscan backdrop, as you spend time with cooks, olive farmers and cheese producers – the area’s best sustainable artisan producers.

When you’re not out trying new things and meeting local producers, Oli is your experienced chef and trained pasta maker who will walk you through a carefully selected repertoire of dishes and share the secrets and skills you need to create fresh pasta and risotto dishes from scratch.

This Italian cooking holiday and pasta-making break is perfect for those who want to escape, indulge in amazing food, and pick up valuable techniques to last you a lifetime. Mixed in with rural visits, rolling countryside, and relaxing pool time, this will leave you wanting for nothing.

Arrival

3pm – Check in to your apartment and get to know the team and your surroundings. Take a moment to relax before the adventure begins.

5pm – Welcome drink and introduction at our HQ, with your first glimpse of the beautiful panoramas. Get to grips with handmade potato gnocchi in your first cooking masterclass.

8pm – Dine al fresco under the pergola on an indulgent four-course welcome feast, including the gnocchi you made earlier, and a number of other delicious local dishes prepared by your private chef.

Farm Visit and Risotto Masterclass

9.30am – Visit a local buffalo mozzarella farm, starting the day off with a delicious buffalo milk cappuccino before taking a guided tour, meeting the buffalos, and tasting their amazing range of cheeses.

12pm – Head to a farm near the coast for an insightful tour of an organic Tuscan rice farm. We’ll pick some rice up for the risotto class later!

5pm – Aperitivo with a view, followed by a risotto masterclass using our local rice, plus a lesson in perfect biscotti making.

8pm – Enjoy the fruits of your labour for dinner, eating the risotto you have made out in the square of our medieval village with plenty of good wine!. Your private chef has also thrown in a couple of extra gastronomic treats.

Pasta Shapes

10am – Learn to craft handmade pasta shapes in an intimate workshop, trying your hand at tagliatelle, garganelli and farfalle. The perfect introduction to pasta making with our experienced chef.

1pm – Toast your handy work with a well-earned lunch consisting of local delicacies and your wonderful handmade pasta.

7pm – Visit an organic local family vineyard to learn about winemaking. Walk amongst the vines, taste the Tuscan wines, and enjoy a traditional multi-course dinner afterwards cooked with local and seasonal produce.

Departure

9.30am – Take your pasta skills to the next level. Learn to make filled pasta in this workshop, with stuffed shapes like tortelli, ravioli, and ‘plin’. We’ll also learn the secrets of perfect Tiramisu making!

12pm – Enjoy a final farewell lunch, feasting on the filled pasta you made over the course of the morning, not forgetting that Tiramisu!

2pm – Wave goodbye to your Tuscan surroundings and prepare to leave with all the new culinary skills you have mastered. Check out and ground transfer to the train station.

Accommodation

Private Apartment

Perfect for friends and couples to share or for a solo traveller who wants their own space.

Each apartment is furnished and presented in a traditional yet elegant Tuscan style, with terracotta floors and wooden beamed ceilings. They are equipped with kitchenette, bathroom with shower, bed linen and towels, independent heating, tv and wi-fi.

Your accommodation also has a swimming pool (open from June to September), with sunbeds and umbrellas, and an outdoor patio with chairs and tables to enjoy the view from. There is a washer and dryer, and if you choose to drive to us, there is private off-road parking.

From your apartment you will be just a few paces away from the magical old town of Roccatederighi, and a range of bars, restaurants and shops. Your kitchenette will be stocked with great local products for your breakfasts.

Location

Your base on this unique Italian cooking holiday will be in the beautiful village of Roccatederighi, carved into the rocks 500 metres above the flatlands below. From up there, on a clear day you’ll be able to see the islands of Giglio, Elba, or even Corisca.

The undisturbed Maremma coast produces extremely fine ingredients and dishes. Some of the local specialities include stuffed pasta, cured meats, honey, wild boar, hearty soups and chestnuts.

The village and your accommodation is easy to reach from main train station and airports in the area. Take a fast train from Pisa Central to Grosseto, the nearest local train station, and it will take you just 75 minutes. If you decide to come from Rome. it will take you less than 2 hours by train. Transfers to and from Grosseto station to your accommodation are included in the price of your cookery holiday.

- Most of the activities are operated in hilltop villages where the walkways are often steep and uneven

- Special requests can be made and looked at on a case by case basis and the trip tailored accordingly

What can I do in my free time?

- As you’re located right in the village, have a shop, or try a local bar or restaurant and meet some locals
- The village has a wonderful old town, built into the rocks, with lovely historical churches and architecture - don’t forget to bring your camera!
- Enjoy the sun and lounge on the deck by the pool
- Rent a bike and enjoy the Tuscan countryside
- Your hosts will help you utilize the public transport if you would like to visit nearby towns or the coast
