Italian cooking | ‘Trota en Saor’ – marinated trout recipe

This Italian dish is simple, fresh and easy, and comes right from the shores of Lake Garda, northern Italy.

It is a recipe from Italian Chef Andrea’s kitchen, who runs Italian cookery holidays with his wife Lara from their restaurant near the town of Torri del Benaco on Lake Garda.

Lara is naturally a big fan and highly recommends it if you are looking for a taste of Italian lake life from the comfort of your home.

Serves 4 people.

Ingredients

2 fresh trouts
50g capers
4 anchovy fillets
2 red onions
1 soup spoon of apple vinegar
¼ cup of extra virgin olive oil
1 clove of fresh garlic
1 pinch of oregano
Fresh rosemary
1 tablespoon of sugar
1 pinch of chilli powder
For the polenta :
½ litre of water
200g corn flour (polenta)
A pinch of salt

You will need

A frying pan and large plate

Directions

Clean and prepare the trouts by removing all the fish bones and skins and boil them until cooked.

When cooked, flake the fish on a large serving plate.

In the meantime prepare the sauce by frying olive oil, chopped garlic, sliced red onions, anchovies and capers. Add the rest of the ingredients and stir for 5 minutes.

Top the trout with the sauce and mix it gently. Serve with hot, soft or grilled polenta.
